Gratitude and Drill Sargents

Good Morning!

I have a very specific goal today:  I will write and address handwritten thank-yous for each of you who have helped us.  :)  I know, I know.  It's five weeks past the beginning of bedrest, and I'm just getting to the thank-yous?  Emily Post would be disheartened, if not panicked.  However, I can't really explain it all.  The thing that makes me more emotional than any other aspect of this situation is how amazing you have all been to us.  So, I've avoided the thank-yous for a multitude of reasons:

1. They were in a drawer downstairs. (If I forget to get them in the morning, I'm stuck without them for the day,)

2. When I start to think about how much you all mean to me, I get super sentimental and emotional.  Then I spend the rest of the day weeping over the silliest things (like the commercial with the daddy who is practicing cheer moves with his daughter!).

3. I feel like a small card with a few words of gratitude is a grossly under-representative token of our thanks.  For now, however, it will have to do.

(By the way, that cookbook I want to put together?  It's never gonna happen if I don't get a recipe!!)  Hint, hint.  Wink, wink.  Oh, and Christy, when I was growing up, we called that dish Goulash, and it was my favorite.  I have been looking for a recipe since I got married, but I could never find one I liked.  Your dish was exactly what I remember as Goulash!  Exactly!  If it's not a family secret, would you mind sharing the recipe?  :)

So, anyway, I'll probably be away from the computer most of today, because I've got a ton of thank-yous to write.  

Oh, and about the drill sargent?  Her name is Autumn.  LOL!  She's here to watch Ruby today.  She has been here for one hour, and she has already admonished me for sitting up instead of laying down.  (It has been a growing temptation that I have not been resisting very well...)  Really, though, I'm just kidding.  Autumn is really truly amazing (with Ruby and me!)  I just thought I'd give her a hard time, since she regularly stalks this blog.  :)

Good morning Lindsay! Hope you are able to rest well today. Good news about the Dr. appointmant update in the prior post.

I use to be quite consistent about Thank You's. Now I just try to relay my gratatude most of the time. I'm sure you've did just that with everyone so far. Don't fret over it. :))

Goulash....I didn't think anyone else liked that. My grandma would make it and I loved it. Scott can't stand it. I use to make a small amount once in a while for just me, but haven't in a really long time. Cookbook? What up with that?

Holiday Spaghetti
Preheat Oven: 375

1 c. minced onions
1 lb. hamburger
2 tsp. salt
4 Tbsp. sugar
3 1/2 c (1 can) stewed tomatoes
1 can tomato soup
8 oz macaroni, cooked and drained

Brown hamburger and onions. Drain. Add salt, sugar tomatoes and soup. Mix well. Add macaroni and mix well. Can cover with cheese or not. Spray casserole dish with Pam. Bake for 25 min.

Hey Lindsay - I have a super tasty goulash recipe, too!

1 lb. ground beef
1 small onion chopped
1 clove garlic minced
1 cube beef bouillon
1 can 26 oz. stewed tomatoes
1 8 oz can of tomato sauce
2 tbs worcestorshire (which I like to call wor-chester-shire, cuz I'm silly like that...)
1 tbs?chili sauce
Italian seasoning
2 cups (uncooked) macaroni

cook macaroni according to package instructions. you may want to leave it slightly al dente, since it should cook with sauce for a bit, too.
meanwhile,
brown ground beef with diced onion and minced garlic. drain fat. add tomatoes, bouillon cube, tomato sauce, worcestershire, chili sauce ( i have a question mark there, because I don't have an amount on my recipe card. one of those family recipes where mom (or step-mom, in this case) says I don't know I just add some... annoying.) and then italian seasoning. again not sure how much - maybe a teaspoon? use your best judgement.

mix sauce with macaroni and heat through. it's definitely better the next day.

oh - yum - I will have to make this. I knew there was a reason I bought garlic yesterday!

I hope you don't stress yourself out too much sending thank you notes. We all do the things we have out of love for you and your family. Verbally expressing thanks or a simple hug...more than enough. But, that is up to you. I was too overwhelmed after I had Lydia to do individual, hand written thanks yous to everyone. I think I sent several e-mail thank yous and handwritten to a select few. I've been feeling a little guilt about that, but like to think everyone understood.

Is that bad to call Autumn, The Bed Rest Nazi (kinda like the Soup Nazi from Seinfeld)? I mean it in the nicest, serious-about-looking-out-for-you kinda way :-)
