Losers - Bulgar Salad

  • 3 c. hot cooked bulgar
  • 5 oz. chopped baby spinach, cooked
  • 1 c. halved cherry tomatoes
  • 3 T. lemon juice
  • 2 T. extra virgin olive oil
  • 1/2 t. salt
  • 1/4 t. pepper
  • 1/4 c. feta cheese

Mix all the ingredients together in a bowl and serve.  (Not hard, huh?)

I haven't tried this yet, but I think it sounds good.  I'm substituting cous cous for the bulgar.  I don't even know what bulgar is.  :)

This makes 6 servings, and it's a side dish.  Each serving is about 150 calories, and it's got a lot of fiber!
