Losers - Cheese Manicotti

  • 16 manicotti shells
  • 1/4 lb. sausage
  • 15 oz. part-skim ricotta cheese
  • 8 oz. shredded fat-free mozzarella cheese
  • 1/4 c. grated Parmesan cheese
  • 1 T. dried parsley
  • 1/2 t. salt
  • 1/4 t. black pepper
  • 4 c. reduced fat jarred spaghetti sauce

Preheat oven to 350 degrees

Cook pasta according to directions.  Drain and set aside to cool on foil.

Brown sausage, drain, and set aside.

Mix together cheeses (save some mozzarella to sprinkle over top of finished dish), parsley, salt, and pepper.  Add cooled sausage and mix.  Stuff the cooled shells with the sausage/cheese blend.

Pour a thin layger of spaghetti sauce on the bottom of a 9x13 pan.  Place the stuffed shells in the pan in a single layer.  Cover pasta with remaining sauce.

Cover dish with foil and bake for 40 minutes.  Remove foil, sprinkle remaning mozzarella cheese on top and bake for an additional 5-10 minutes, until the cheeses are hot and bubbly.

This recipe makes 8 servings.  Each serving is roughly 350 calories.
