Losers - Chicken Fingers

  • 2/3 c. Bisquick Heart-Smart Baking Mix
  • 1/2 c. reduced fat Parmesan Cheese
  • 1/2 t. salt
  • 1/2 t. paprika
  • 2 eggs
  • 2 boneless, skinless chicken breasts, cut into eight strips/breast

Heat oven to 450F. Line cookie sheet with foil; spray with cooking spray.

In 1-gallon resealable food-storage plastic bag, stir together Bisquick® mix, cheese, salt and paprika.

In small bowl, beat eggs.

Dip half the chicken strips into eggs; place in bag of Bisquick mixture.

Seal bag; shake to coat.

Place chicken on cookie sheet. Repeat with remaining chicken.

Bake 12 to 14 minutes, turning after 6 minutes with pancake turner, until no longer pink in center.

This recipe makes four servings (four strips per serving).  Each serving has about 250 calories.  Enjoy!
