Losers - Chicken, Pear, and Parmesan Salad

  • 4 cups spinach leaves
  • 1 boneless skinless chicken breast, cooked and shredded
  • 2 pears, peeled, cored, and cubed
  • 1/2 small red onion
  • 1/4 c. dried cranberries
  • 1/4 c. Parmesan Cheese
  • 2 T. cider (or white wine) vinegar
  • 2 T. olive oil or canola oil
  • 1 T. honey
  • 1/4 t. salt
  • 1/4 t. black pepper

In a small bowl, whisk together vinegar, oil, honey, salt, and pepper.  In a large bowl, layer spinach, chicken, onions, and cranberries.  Drizzle the salad with dressing and sprinkle the parmesan cheese on top.

This salad should make four servings, and each serving is about 300 calories.  Enjoy!
