Losers - Cornmeal Crusted Tilapia with Salsa

Fish:
- 1/4 c. flour
- 1/4 c. cornmeal
- 1 T. water
- 1 egg white
- 4 tilapia filets (about 6 oz. each)
- 3/4 t. salt
- 1/2 t. chili powder
- 1 T. olive oil
Mix flour and cornmeal on a plate. Set aside. Mix water and egg white in a bowl. Set aside.
Season fish filets on each side with salt and chili powder. Dredge through the water/egg mixture, then coat with the flour/cornmeal mixture.
Add olive oil to frying pan and fry for about 2 1/2 minutes on each side.
Salsa:
- 1/4 c. cilantro leaves
- 1/2 c. chopped onion
- 1 T. lime juice
- 1 c. tomatillos
- 1 garlic clove, minced
Combine all ingredients in a blender or food processor and blend until smooth.
This recipe makes four servings, and each serving is about 250 calories. I honestly don't like fish, but this recipe sounds pretty good to me!
