Losers - Honey Mustard Baked Chicken

  • 4 boneless, skinless chicken breasts
  • 1/4 c. butter, melted
  • 1/4 c. sugar-free honey
  • 1/4 c. mustard
  • 1 t. salt
  • 1 t. curry

Mix all ingredients (except chicken breasts).  Marinate the breasts in the mixture for at least 1/2 hour (in the fridge.)  Bake the breasts in a shallow baking dish for 30 minutes.  (Cover the breasts with foil so they don't burn.)  Uncover the chicken, baste the breasts in the leftover mixture and bake for an additional 20 minutes.

Enjoy!  This makes 8 servings (1/2 breast per serving), and each serving is about 250 calories.

I think this would be good on top of rice or with mixed veggies.
