Losers - Potato Soup

  • 28 oz. can fat-free chicken broth
  • medium onion, roughly chopped
  • large celery stalk
  • 24 baby carrots (or 4 large carrots, sliced up)
  • 12 medium red potatoes, sliced
  • 1 small can fat-free evaporated milk
  • 1/4 block of Velveeta Cheese

Pour the broth into a large pot over high heat, add onion, celery, and carrots.  Then, bring to boil.  Reduce heat, add potatoes and cook until everything is soft.  Add evaporated milk and cheese.  Use a potato masher and mix everything up together, smashing the veggies until the soup is the consistency you like.

You can play with the ingredients to get the taste you like.  My Aunt Vicki makes this soup, and it's so excellent.  However, when she tried to tell me how to make it, every instruction was, "I do a little of this and a little of that.  I cook it for a little while until I like it..."  Obviously, these directions were less than ideal.  :)  I did my best to guess at amounts, but it might take some tweaking.

This recipe makes about 8 servings (as best I can tell.)  If you dish out eight servings, then each serving is about 200 calories.
