Losers - Slow Cooker Italian Pork Chops

  • 1 1/2 lb. boneless, skinless pork chops
  • 1 medium onion, chopped
  • 2 t. dried Italian seasoning
  • 4 cloves of garlic, minced
  • 1/2 t. salt
  • 1/4 t. black pepper
  • 2 14 oz. cans of diced tomatoes, undrained
  • 2 T. balsamic vinegar
  • 2 T. cornstarch

Layer chopped onions along the bottom of the slow cooker.

Mix Italian seasoning, garlic, salt, and pepper together in a small bowl.

Place half the pork chops on top of the onions and sprinkle half of the spice mixture on the chops.  Then place the rest of the chops on top and sprinkle with the remaining spice mixture.  Pour the tomatoes on top of the chops.

Cook on LOW for 8-9 hours or HIGH for 4-4 1/2 hours.

Remove meat and tomatoes with a slotted spoon.  In a medium saucepan, mix cornstarch with 2 T. COLD water.  Add juices from the slow cooker and stir over medium heat until thick and bubbly.  Pour sauce over chops and tomatoes.

This is yummy served with plain pasta or rice.

Six servings.  250 cals per serving.
