Losers - Slow Cooker Pot Roast

  • 2 lb. chuck roast
  • salt and pepper to taste
  • 1 packet dry onion soup mix
  • 1 c. water
  • 3 carrots, cut into large pieces
  • 1 onion, roughly chopped
  • 6 red potatoes, halved
  • 1 stalk celery, roughly chopped

Salt and pepper the roast on all sides.  Add roast and veggies to slow cooker.  Mix soup mix with water and pour over the top of beef and veggies.  Cook on low for 8-10 hours or high for 4-6 hours.

This recipe makes 8 servings.  Each serving is roughly 300 calories.  Any leftovers can easily be turned into beef stew!  Enjoy!
