Pumpkin Spice Bars

Okay, make sure you pay close attention, because this is an extremely complicated recipe.  ;)

Ingredients:

1 15 oz. can of Libby's Pure Pumpkin
1 box of Betty Crocker SuperMoist Spice Cake Mix

Optional:

1/2 t. cinnamon
1/8 t. ground ginger
1/8 t. allspice
1/8 t. nutmeg
1 can of Betty Crocker Whipped Cream Cheese Icing

Directions:

Pre-heat oven to 350 degrees.
Spray a 9"x13" pan with PAM.
In a seperate bowl, mix the pumpkin, cake mix, and spices (optional).
Spread the mixture into the pan.  (Note: These bars will bake up in basically the same shape you spread them.  So...you can be creative and make a shape, or you can be boring (like me) and push the mix to the edges and level the mix across the entire pan.)
Bake for 18-20 minutes, until a toothpick comes out of the middle fairly clean.
Cut into bars...usually 12.
Enjoy them warm without icing or let them cool and add the cream cheese icing.

Health Note: Without the icing, these suckers are stinkin' healthy...about fifty calories per bar, if you cut them into twelve pieces.  With the icing, they still aren't bad (as long as you don't pile on 1/2 c. per bar.)  :)

Final note: These can also be made as muffins/cupcakes.  Just put the mix into a muffin tin instead of a 9x12.
